You can make this special sauce as fiery as you want. I used 1/2 teaspoon cayenne pepper, but you can add more or less to suit your tastes. 

Choose your favorite burger meat for the burgers. You can shape one pound of ground beef into burgers, or you can buy the pre-shaped burger patties from the grocery store. You can also make poultry burgers with ground chicken or ground turkey. When using poultry, cook the burgers until they reach 165 degrees on a meat thermometer.

Burgers with Spicy Special Sauce

Ingredients
 

  • 1 pound lean ground beef, or 4 pre-shaped store-bought burger patties
  • Salt and freshly ground black pepper
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon ketchup
  • 1 tablespoon sweet relish, or diced sweet gherkins
  • 1/2 teaspoon cayenne pepper, or more/less to taste

Instructions
 

  • Preheat a large skillet, stove-top grill pan, or outdoor grill to medium-high.
  • Season both sides of the burgers with salt and pepper and add to the hot pan/grill. Cook until you reach your desired doneness (130-135 degrees for medium-rare).
  • Meanwhile, in a small bowl, whisk together the mayonnaise, Dijon mustard, ketchup, relish, and cayenne pepper. Season to taste with salt and pepper.
  • Serve the burgers with the special sauce on the side.
