Chicken with Sweet Pepper Relish

This amazing dish boasts moist ground chicken, fresh onion and bell pepper, Italian herbs, and store-bought sweet relish, a lively blend of sweet/tangy peppers and mustard seed. The relish adds complexity, texture, and incredible depth of flavor.

Why is relish relegated burgers and hot dogs?! I had this jar of relish, and I saw how robust it was. Green and red bell peppers, onions, and mustard seeds, in a sublime vinegar and sugar base. I thought, “That’s a one-stop-shop for flavor!” So I used it to braise my chicken and veggies. It made the MOST fantastic sauce. No broth needed. Seriously, I added nothing else but the relish.

Store bough relish can be found in many forms. I chose bell pepper sweet relish, but you could also use hot relish if that’s more your style.

I made this dish with ground chicken, but ground turkey or pork would be equally fabulous. This sauce is light and fresh, so it works incredibly well with “white” meats. You can certainly try it with ground beef (I mean, you put relish on burgers, right?). Let me know if you try it!

How should you serve your chicken with sweet pepper relish? I served mine in bowls, just like a stew. That kept the meal gluten-free, which was my plan for the evening. I served roasted potatoes and steamed broccoli on the side. You could also serve the chicken over rice, your favorite grain, or with bread, pasta, couscous, or quinoa.

Chicken with Sweet Pepper Relish

This amazing dish boasts moist ground chicken, fresh onion and bell pepper, Italian herbs, and store-bought sweet relish, a lively blend of sweet/tangy peppers and mustard seed.

Ingredients
 

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1/2 cup chopped onion, any color
  • 1 bell pepper, any color, seeded and chopped
  • 1/2 teaspoon Italian herb seasoning
  • Salt and freshly ground black pepper
  • 12- ounce jar sweet pepper relish, or about 1 1/4 cups (this doesn’t have to be accurate)
  • Fresh parsley for serving, optional

  • Heat the oil in large skillet or saucepan over medium-high heat. Add the chicken and cook until no longer pink, breaking up the meat as it cooks. Add the onion and bell pepper and cook for 3 to 5 minutes, until soft. Add the Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and stir to coat. Cook for 1 minute, until the herbs are fragrant.
  • Add the relish and bring to a simmer. Reduce the heat to low, partially cover and simmer for 10 minutes. Season to taste with salt and black pepper.
  • Top with parsley, if using, and serve.
