I used fresh cilantro and fresh limes for the ultimate flavor and they truly deliver! If you can, try to use fresh cilantro and limes here; the dried herb and bottled juice simply can’t deliver the same flavor.

You can serve this rice with almost anything, and it’s great warm or chilled.

Serve the flavorful rice alongside chicken, beef, pork, seafood, beans/legumes, or a mound of roasted vegetables. It’s the ideal side dish for any protein and/or vegetable.

This dish is gluten-free and can be vegan too. If you want a totally vegan dish, use vegetable broth instead of chicken broth.

You can easily turn this delicious rice dish into a main dish! For a meal with more protein, add cooked chicken, steak, seafood, shellfish, tofu, and/or beans and legumes.

Cilantro Lime Rice

This fluffy rice is bursting with flavor thanks to a commingling of green onions, garlic, cilantro, and fresh lime. Gluten-free, low-fat, low-calorie, and easy to turn into a wholesome, complete meal.

Ingredients
 

  • 2 cups long grain white rice, or jasmine rice
  • 4 cups chicken broth, vegetable broth, or water
  • 1 tablespoon unsalted butter
  • 3 green onions, white and green parts separated and chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh cilantro
  • 1 1/2 tablespoons fresh lime juice
  • 1 teaspoon grated fresh lime zest
  • Salt and freshly ground black pepper

  • In a medium saucepan, combine the rice, broth (or water), butter, white parts of the green onion, and garlic. Set the pan over high heat and bring to a boil. Reduce the heat to low, cover and cook for 15 to 20 minutes, until the liquid is absorbed and the rice is tender.
  • Add the olive oil, cilantro, green part of the green onions, lime juice, and lime zest and toss to combine. Season to taste with salt and black pepper. Serve warm, room temperature or chilled.
