Ground Beef and Gravy

This irresistible meal features tender ground beef in a thyme-infused, mushroom packed gravy. Made it one pan and ready in minutes, it’s excellent over rice, egg noodles, couscous, mashed potatoes, or scooped up with crusty bread!

This dish is so comforting! But, truth be told, it’s no overly heavy. The gravy is made with the juice from the mushrooms and beef broth, both of which are flavorful AND virtually fat-free. The rest of the flavor comes from onion, garlic, thyme, Worcestershire sauce, and a little tomato paste. All, low-cal, fat-free ingredients!

I used lean ground beef, but this dish works with chicken and turkey too. I chose 85% lean beef for this dish, but leaner meat (90% lean) will also work. You can also use ground chicken and turkey! And when it comes to the mushrooms, I used cremini (baby bella), but you can use button mushrooms or your favorite wild mushroom variety (or a medley of mushrooms).

What should you serve with your beef and gravy? I served the beefy mixture over creamy mashed potatoes so we wouldn’t miss a drop. I suggest you do the same, or serve the beef and gravy over egg noodles, pasta, rice, cauliflower rice, couscous, or your favorite grain. Add a steamed green vegetable on the side and you’re ready to go!

Ground Beef and Gravy

This irresistible meal features tender ground beef in a thyme-infused, mushroom packed gravy. Made it one pan and ready in minutes, it’s excellent over rice, egg noodles, couscous, mashed potatoes, or scooped up with crusty bread!

Ingredients

  • 1 pound lean ground beef
  • 1 yellow onion, chopped
  • 8 ounces sliced mushrooms, I prefer cremini/baby bella
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper
  • 1/2 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 1 1/2 cups beef broth
  • 1 teaspoon Worcestershire sauce

For serving

  • Mashed potatoes, noodles, couscous, rice, cauliflower rice, or your favorite grain

Instructions

  • Brown the beef in a large skillet over medium-high heat. If necessary, drain away excess fat.
  • Add the onion, mushrooms, and garlic to the pan and cook for 3 to 5 minutes, until the onion and mushrooms are tender.
  • Add 1/2 teaspoon salt, 1/4 teaspoon black pepper, and the thyme and stir to coat. Add the flour and tomato paste and stir to coat.
  • Add the beef broth and Worcestershire sauce and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  • Reduce the heat to low and simmer for 10 to 15 minutes, until the sauce thickens to a gravy-like consistency. Season to taste with salt and black pepper.
  • Serve over mashed potatoes, noodles, rice, or your favorite grain.
