Buttered Noodles

Soft, buttery noodles, seasoned simply with salt and pepper and showered with plenty of parmesan cheese. Main dish, side dish, cherished dish any time.

We love buttered noodles in my house! In fact, I piled this entire batch into a container and brought it to my son in college! I often serve buttered noodles just like this, as a side dish, but they’re also great as a base for stroganoff, meatballs and gravy, and more!
I used yolk-free egg noodles, but you can use any noodle you want. Traditional egg noodles are classic, but this recipe works with any pasta shape. Pro tip: Don’t rinse the noodles after cooking; the hot noodles will melt the butter when they meet in the pot!

I prefer unsalted butter for these buttered noodles. That way, I can season the noodles to my liking. If you only have salted butter that’s fine, simply season to taste with salt and black pepper just before serving. Also, I used 4 tablespoons of butter here; you can use more or less to suit your taste and desire.

You don’t have to add the parmesan cheese. Classic buttered noodles don’t typically have parmesan cheese, but I love the salty addition. Feel free to leave it out.

You can add fresh herbs to these buttered noodles. As you can see from the pictures, I served chopped fresh parsley on the side for anyone who wanted it. Other great choices include oregano, basil, thyme, and chives. You can also add dried herbs, like Italian seasoning, oregano, and basil, as well as crushed red pepper flakes. When using dried herbs, add them to the noodles when you add the butter.


Buttered Noodles
Ingredients
- 16 ounces egg noodles
- 1/4 cup unsalted butter, or more/less to taste
- Salt and freshly ground black pepper
- Freshly grated or shredded parmesan cheese, optional
- Chopped fresh parsley, optional
Instructions
- Cook the noodles according to the package directions. Drain and return the noodles to the pot. Add the butter and toss gently to coat the noodles and melt the butter. Season to taste with salt and black pepper.
- Transfer the noodles to serving bowls and top with parmesan cheese and parsley, if using.
