Garlic Roasted Potatoes and Onions

These amazing potatoes are golden and crispy on the outside, and tender and fluffy on the inside. They’re laced with garlic, roasted alongside onions (which caramelize beautifully), and scented with Italian herbs. Quick, easy, and practically zero cleanup!

There’s so much flavor in these potatoes, even though the ingredient list is short! That’s thanks to the garlic and onions, plus a smidge of Italian herb seasoning. And the olive oil – use a good-quality/nice tasting olive oil for the best flavor.

Serve these potatoes with practically anything! I served them alongside burgers, but they partner with virtually everything, from roasted chicken, to steak, to crab cakes.


Garlic Roasted Potatoes and Onions
Ingredients
- 1 1/2 pounds small red potatoes, halved, or medium red potatoes, quartered (you can also use gold potatoes)
- 1 small yellow onion, cut into 2-inch pieces
- 3-4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes, optional
- Salt and freshly ground black pepper
Instructions
- Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or coat with cooking spray.
- In a large bowl, combine the potatoes, onion, and garlic. Add the olive oil, Italian seasoning, crushed red pepper flakes, 3/4 teaspoon salt, and 1/4 teaspoon black pepper and toss to coat.
- Transfer the mixture to the prepared pan and roast for 25 to 30 minutes, until the vegetables are golden brown and the potatoes are tender.
- Season to taste with salt and pepper and serve hot.
